[chronik] Fix the windows build

Summary:
The karyon library doesn't cross compiler properly for windows. This has been fixed upstream (https://github.com/karyontech/karyon/pull/12) so let's use the latest github version until the fix is deployed to crates.io.

Depends on D17320.

Test Plan: Run the guix windows build.
