tests: remove member connman/peerLogic in TestingSetup

Summary:
This is a partial backport of Core PR14605 : https://github.com/bitcoin/bitcoin/pull/14605/commits/136bd7926c72659dd277a7b795ea17f72e523338

This required to have various tests modified as they use std::unique_ptr.
